I don't really find any real money-making uses for tailoring. I'm an enchaner and i can disenchant but I don't think it's quite as efficient as a gathering skill. I'm a bit nervous about dropping it though because of all the time and effort I put into it...
I would recommend against it personally, just because there hasn't been any announcements made on the direction for professions in Lich King. Of course you always have the ability to re-level it if you want to, so just sort of weigh the risks and see what's going to make your play time the most enjoyable.
