What do night elves have left at this point?

Ashenvale? Gobbled up by the Warsong clan.

Azshara? Occupied by goblin squatters, hope you like golf.

Darkshore/Auberdine? Whoops, tidal wave.

Feathermoon Hold? Same as Darkshore.

Val'Sharah? Half consumed by the nightmare.

Teldrassil? TIMBER!

Hell, they don't even have the bastion of Stormwind park anymore after Deathwing rekt it.

Seriously, what do the night elves get out of this?

A thirst for revenge. If that doesn't make you want to play a Night Elf I'm not sure what will. I may main Horde at the moment (even though my team plays Alliance) but I want to see the Night Elves rise up and control the charcoal trade.
