So, I haven't seen any answer on this, at least not in months, So to clarify, for enrage does it stack? If the minion is healed to full, does the enrage get removed? Any other quirks I should know about?

Enrage does not stack. Enrage works like a light switch: If the minion is damaged at all, his Enrage ability is active. If the minion is healed, the Enrage ability is no longer active. Just like a light switch, it can be turned on and off with damage and heals.
