This is probably not a definative guide for all the enchants, but I'll give it a go!
If you want me to add to it, post below and I'll update :)

Tanking

Head
  • Presence of Might (Zul'Gurub) - 10 Stamina, 7 Defense, and 15 Shield Block value.

  • Libram of Protection (Dire Maul) - 1% Dodge.

  • Libram of Constitution (Burning Steppes) - 100 HP.

Shoulder
  • Fortitude of the Scourge (Sapphiron) - 16 Stamina, 100 Armor.

Chest
  • +100 HP (General Enchant)

  • +4 Stats (General Enchant)

Bracers
  • +9 Stamina (General Enchant)

Gloves
  • +15 Agility (General Enchant)

  • +Threat (General Enchant)

Legs
  • Presence of Might (Zul'Gurub) - 10 Stamina, 7 Defense, and 15 Shield Block value.

  • Libram of Protection (Dire Maul) - 1% Dodge.

  • Libram of Constitution (Burning Steppes) - 100 HP.

Boots
  • +7 Stamina (General Enchant)

Cloak
  • +1% Dodge (General Enchant)

  • +70 Armor ;)(General Enchant)

Weapon
  • +15 Agility (General Enchant)

Shield
  • +7 Stamina (General Enchant)

  • +2% Block (General Enchant) Probably less useful that 7 Sta.

Other
  • +3 Defense (General Enchant/Leatherworking) - Available on Chest, Legs, Hands, Boots and Bracers

DPS

Head
  • Libram of Voracity, 8 Str(Burning Steppes) - +16 attack power.

  • Libram of Rapidity, 1% Haste(Dire Maul)

Shoulder
  • Zandalar Signet of Might (Zul'Gurub) - +30 Attack Power.

  • Might of the Scourge (Sapphiron) - +26 Attack Power, 1% Crit.

Chest
  • +100 HP (General Enchant)

  • +4 Stats (General Enchant)

Bracers
  • +9 Strength (General Enchant)
  • - +18 Attack Power.

Gloves
  • +15 Agility (General Enchant) - +0.75% Crit.

  • +7 Strength (General Enchant) - +14 Attack Power.

  • +1% Haste (General Enchant)

Legs
  • Libram of Voracity, 8 Str(Burning Steppes) - +16 attack power.

  • Libram of Rapidity, 1% Haste(Dire Maul)

Boots
  • +7 Stamina (General Enchant)

  • +7 Agility (General Enchant) - +0.35% Crit.

Cloak
  • +3 Agility(General Enchant)

  • -Threat(General Enchant)

Weapon
  • Crusader (2h or Dual Wield) (General Enchant)

  • +15 Strength (Dual Wield) (General Enchant)

  • +15 Agility (Dual Wield, personal pref?) (General Enchant)

  • Weapon Chain (PvP) (Reasonably Rare Blacksmithing Plan) - Immune to Disarm

Resistance

Head
  • Libram of Resilience (BRD) - +20 Fire Resistance.

  • Ice Guard (Argent Dawn) - 10 Frost Resistance.

  • Shadow Guard(Argent Dawn) - 10 Shadow Resistance.

  • Savage Guard (Zul'Gurub) - 10 Nature Resistance.

Shoulder
  • +5 Resistances (Argent Dawn) - One school (revered) or All schools (exalted).

Legs
  • Libram of Resilience (BRD) - +20 Fire Resistance.

  • Ice Guard (Argent Dawn) - 10 Frost Resistance.

  • Shadow Guard(Argent Dawn) - 10 Shadow Resistance.

  • Savage Guard (Zul'Gurub) - 10 Nature Resistance.

Cloak
  • +15 Fire Resistance(General Enchant)

  • +15 Nature Resistance(General Enchant)

  • +10 Shadow Resistance(General Enchant)

  • +5 All Resistances(General Enchant)

Shield
  • +8 Frost Resistance (General Enchant)
